I bet they have a large metal 'cone' that they roll the dough on
And then "wash" the whole thing with the milk and/or egg wash, and then add the sugar... And just bake for 10-15 mins...

I could make one at work...

we dont bake emm ..

we use a large metal plate.. just like the one in a japanese restoran ..

then roll it when its still hot enough

You dont actually need an oven. They make it on a flat round pan and when its cooked, they roll it up quickly while its hot and cool it. When its cooled down, it'll harden.

Wings took 4+ hours, Salad is "greek" with a light basalmic vinagrette dressing.
