Smile Pork Spare Ribs

MMMmmm, Ribs the way I like them. Salt and pepper only, Slow roasted @325F for four hours, Ohhh, So tender!

Yeah four hours... I like to roast them nice and slow so that a lot of the fat in the ribs melts out and gets soaked up by the potatos. This gives the potatos a deep fried taste that is to die for. And by such slow roasting, the meats surface gets so nice and caramelized.

Wow.. That's painstaking work!

Jenny sometimes roasts pieces of marinated chicken meat with a Mexican hat. Not sure if that's the actual name, but that's what they called it!

Anyway, it was SUPERB and only took 20 minutes!

Oh it's really not hard at all. In fact it is super easy.

Like take ribs out of package, place in pan, salt pepper both sides. Wash and slice potatos put in the pan. Cover loosely with foil bake 3 hours @325F. For the last hour remove the foil and turn the potatos once or twice. Simple. Sure four hours to make... But only about 10-15 minutes of actual work. And the smell as it's roasting... Priceless!
