Panning means your camera follows the object. Use viewfinder is more stable because your arms leans on your body, so less likely to shake, which is important for panning because slower shutter speed is needed to get the motion blur effect.

I think using EVF is the best way to shoot fast moving objects. The best way to shoot is to pan, and it's very hard to pan using the external LCD screen.

Well, you can only use VF on SLRs...
