Is Window XP SP 2 safe?
no other updates
non-microsoft office products(ms outlook...)

Isn't Outlook part of MS Office?

Yeah, it is essential to update the windows, provided that your system is connected to the internet.

A few days ago, I installed Windows XP SP1 into one of my system and it is a very old copy. Right after I installed the OS, I connected to the internet and within a few minutes, it is infected by some virus already So I ended up reinstalling the OS (this time with SP2)

Yeah I recommend you update to SP2 too... it's the same as SP1 just safer.. not that you are safe with windows anyway...

I know outlook is very exposed.. just an example
