Is it something to do with the number of plates on the HDD?

I'm not sure if Black is available in 750GB

More like the areal density. The higher the areal density, the higher the drive's throughput, if all other factors remain the same.

Almost all models have Black, but thanks to the demand in Malaysia, you should be thankful they still sell 1TB Black or Velociraptor!
